Taking 5 with Five Senses Coffee

This week we catch up with Damien Steponavcius, Victorian Head Roaster at Five Senses Coffee. We cover data analysis and consistency, man crushes, and which day of the week it’s acceptable to drink a beverage other than coffee.

MICE: What is your favourite day of the week and why?
Damien Steponavicius: Definitely Saturday! It’s a chance for a well-earned rest and a cheeky glass of red wine.

MICE: Who would you like to have a coffee with and why?
Damien: I would have to go with my current man crush Kevin McCloud, the host of television show Grand Designs. The man has intellect, wit and a nice dulcet tone.

MICE: What is your favourite food to have with your coffee?
Damien: To be honest I actually never eat food with my coffee, although I am a latte drinker – so perhaps milk counts!

MICE: What’s one thing people may not know about Five Senses Coffee?
Damien: People might be surprised at how manual everything is; we are very hands on. We use equipment to move heavy items and have computers and probes to ensure things are running efficiently, however there is a strong artisan element to compliment the science.

MICE: What is your biggest achievement?
Damien: Being a data nerd, I’ve spent a lot of time helping to build systems that capture and analyse all of our roast and cupping data – all in the name of delivering consistent quality. We have multiple pieces of roasting equipment, controls and people, and harnessing all of our roasting expertise and information has been a challenge but incredibly rewarding. I must also say my kids!
