What an ONA
This week we sat down with the lads from ONA Coffee. Roasters Sam Corra, Danny Wilson and Gage Osbourne gave a collaborative insight into what inspires them and their achievements.
MICE: What is your biggest inspiration?
ONA Coffee: Definitely chasing the flavour! It’s always exciting to try a new roast and different brew methods to find new taste profiles in coffee. We are inspired by the variety of coffees that we are lucky enough to roast and brew as well as the hardworking people who produce them.
MICE: What is your favourite day of the week and why?
ONA Coffee: Friday, as we always finish the week by going back and tasting everything we have roasted that week and finding the best way to brew it. We then release all of our tasting notes and brewing recipes online and share them with our customers.
MICE: Who would you like to have a coffee with and why?
ONA Coffee: Tough question, but we think we’d have to go with the future 2018 World Barista Champion. Competitions are pushing the boundaries of coffee and we can’t wait to see where that takes the specialty coffee industry this year.
MICE: What is one thing people may not know about ONA Coffee?
ONA Coffee: We try to be as transparent as possible and share with our customers and friends. One thing people may not know is that through our sister company Project Origin, we are a part of a collaborative and experimental farming projects in Honduras, Panama and Nicaragua – with more to come!
MICE: What is your biggest achievement as a team?
ONA Coffee: In our minds, one of the greatest achievements of all is coming back to the roastery week after week, pushing the boundaries further and never settling on a certain style or way of approaching coffee. We always try to challenge ourselves as a team and motivate each other to do better every week. There were also several things we were proud of in 2017, including representing Australia at both the World Brewers Cup and the World Barista Championships.
