Cupping Master
Recently we were lucky enough to spend some time with the #1 cupper in the country Yama Kim, here is a snippet – enjoy!
MICE: What is your favourite origin?
Yama Kim: I would say anything from the Toarco company in South Sulawesi, I cup regularly at The Q on Harris and they have been showcasing some amazing Indonesian lots.
MICE: What is your favourite way to drink coffee and why?
YK: Definitely clever immersion because it gives you a really controlled brew method, and it removes some of the human error involved in other brew methods. The results are much more consistency cup to cup. I use clever brews for my practice sets everyday.
MICE: What is your career highlight?
YK: Winning the nationals last year – I have developed so many great relationships with people in the specialty coffee industry as a result. I’m really looking forward to more great coffee experiences this year!
