Will ONA Coffee be back to defend their Championship titles in 2018?
Ahead of the World Barista Championships in Seoul, we sat down with current Australian Barista Champion Hugh Kelly of ONA Coffee to talk inspiration and coffee secrets…
MICE: What coffee do you drink in the morning?
Kelly: Usually when I arrive at the roastery first thing in the morning, I make a pourover with Sam [Corra, Head Roaster] and chat to him while he roasts coffee. I try to not go overboard in the mornings, as I spend most of my day tasting espressos.
MICE: What’s one thing no one knows about ONA Coffee?
Kelly: Well, we don’t really have any secrets…I guess something that is little-known is that the trees in our logo pay homage to our first cafe in the inner south of Canberra, ONA Manuka. It is a small cafe located in an area known as ‘The Lawns’, and there are large poplar trees located out the front.
MICE: What’s best to pair with ONA Coffee?
MICE: Where do you find inspiration?
Kelly: I’m inspired by the hard-working people around me and the wonderful coffee producers and baristas I have met across the world.
